This is a very different breakfast/brunch casserole and it's delicious! The half and half along with the peppers really contribute to the awesome flavor of this recipe. If you like crab, add this to your next brunch!

Ingredients

2 Tbsp
dijon mustard

8 oz
can crabmeat, drained
2 Tbsp
lemon juice
2 tsp
lemon zest

(8 oz.) pkg. shredded white cheddar cheese

eggs
1 c
half and half cream
1 c
milk, 2%
1/2 c
mayonnaise
1 tsp
salt
1/2 tsp
cayenne pepper
1/2 tsp
pepper
2 c
(8 oz.) pkg. shredded swiss cheese
1 c
grated Parmesan cheese

green onions, chopped
1/4 c
red bell pepper finely chopped
1/4 c
yellow bell pepper finely chopped

Directions Step-By-Step

Spread mustard over bottom half of muffins. Place in a greased 9x13" baking dish. Top with crab, lemon juice and peel. Sprinkle with cheddar cheese. Top with muffin tops; set aside.

In a large mixing bowl, whisk the eggs, cream, milk, mayonaise, salt, cayenne and pepper. Pour over muffins; sprinkle with swiss cheese, parmesan cheese, onions and peppers. Cover and refrigerate overnight!

Remove from the refrigerator 30 min. before baking. Cover and bake at 375* for 30 min. Uncover; bake 20-25 min. longer or until set. Let stand 5 minutes before serving... Enjoy!
