Ingredients

COCONUT CREAM VERSION:
3 c milk
1 pkg 6 oz. size coconut cream cook and serve pudding
6 to 8 small frozen waffles, microwaved, 30 seconds torn in 1/2
1/2 c mini chocolate chips
1/2 c flaked coconut
BANANA CREAM VERSION:
3 c milk
1 pkg 6 oz. size banana cream cook and serve pudding
6 to 8 small plain waffles, microwaved, 30 seconds torn in 1/2
1 c mini marshmallows, divided
2 medium bananas, sliced
1/2 c caramel topping, divided
18 tsp dabs hot fudge or chocolate sauce, divided
1/2 c chopped nuts, divided , if desired

Pat's Notes:

A quick and easy dessert to make this summer or any day you want something special to serve your family or friends.
This light and airy dessert will make you go back for seconds.
You will want to make this with other pudding flavors and add in's- idea's are endless. So let's begin, adding chocolate chips, mini marshmallows, nuts, coconut, fruit, pie filling,etc....

 

Directions

Preheat oven to 350^. Spray an 8 or 9- inch square baking pan. Set aside.

Beat milk and pudding mix in a large bowl with a whisk for 2 minutes(this is cook and serve pudding remember and it cooks in the oven not on the stove).

Dip waffles in the pudding mix.(get them good and wet) and place a single layer of waffles on the bottom.(If desired break up waffles and stir into the pudding mixture and layer 1/2 the mixture the same as the following) Sprinkle with 1/2 the chips and sprinkle with 1/2 the coconut.
Repeat with the remaining waffles, coconut and chocolate chips.

Pour remaining pudding mixture over all and bake for 35 -40 minutes or until pudding just comes to boil in center.
Cool 10 minutes before serving, with a dollop of whipped cream and a sprinkle of coconut and chocolate syrup.. Test center with silver knife.

Banana Cream Version:
Prepare the same as above. Layering waffles and remainig ingredients as above. Bake the same.

If desired you can tear up the waffles an mix them into the pudding mixture and layer them following the directions for the layering. I have done it both ways.

This is so- good made one with butterscotch pudding and butterscotch chips and caramel sauce with mini marshmallows in between.To die for!
