You can easily make into 4 servings by adding 2 more potatoes, 1 medium onion, and 2 more eggs. Ingredients For breakfast skillet

    potatoes
  • 1 sm
    onion
  • 6 oz
    chorizo (mexican sausage, mild or medium
  • 2 Tbsp
    butter or margarine
  • 2 Tbsp
    olive oil, extra virgin
  • 3 lg
    eggs

How To Make breakfast skillet

    You'll need a large skillet: peel potatoes, rinse and cut into 1/4" cubes. Turn on skillet to medium heat to get oil and butter hot. Next finely dice onion. Then add this to the skillet. Cook for 10 min. Salt &pepper to taste.

    Add chorizo to skillet cook 5-7 more minutes just to heat chorizo through.

    Beat the 3 eggs and pour over top place lid on an cook 3-4 minutes. Remove lid stir to scramble eggs. Remove from skillet to serving plate. Everyone will love this and just rave over it and all you have to do is sit back, listen, and say yeah I know. Cause I'm awesome like that. Make sure to suck up all the credit and let the family think you took all morning or brunch to make it. Lol
