Thanks to Melissa S. I have a new obsession. Cooking eggs, and whatever my mind can conjure up, in muffin tins. So easy, fun and delicious.

Ingredients

6 slice
bacon
8 large
eggs
1 small
can rotel, drained
1 c
grated cheese, your favorite
non stick spray oil

Directions Step-By-Step

1
If using bacon that shrinks, you will need to figure about 1 1/2 slices each instead of one. So 9 would be enough. Place bacon on baking sheet and bake 375° for approx. 20-25 min. Keep an eye on it, you want to remove it before it is completely cooked so you can "bend" it.
2
Crack eggs into med bowl, whisk well, add salt and pepper is desired. Add DRAINED rotel and cheese and mix together well.
3
Spray large muffin tin cups (6) with non stick spray oil. As soon as bacon comes out of oven, curl it around inside of muffin tins.
4
Using a 1/2 c measuring cup, scoop and pour egg mixture into inside of bacon wrapped muffin tin. Bake at 425° for about 15 min. or till center is firm.
5
You can serve these as is, or put them on a biscuit or dinner roll. They are a great "breakfast on the go" treat that is utterly delicious.
