~ Sourdough - Ham, Egg & Swiss Bake ~ My Way

I had some sourdough bread I needed to use, some ham cubes, roasted red peppers and scallions. Add some Swiss cheese and eggs and this is what I ended up with. What a wonderful flavor, my family loved it! I hope you enjoy this yummy breakfast as much as we did.

Ingredients

2 slice
sour dough bread / cubed and toasted ( about 1 cup )
6
eggs
1 1/2 Tbsp
dijon mustard
kosher
salt & pepper to taste
about
4 ounces sweet red peppers ( fire roasted ) chopped - they come in a jar
about
1 1/2 cup shredded swiss cheese - divided
3 1/2 - 4 oz
cubed, pre cooked ham
3
scallions, thin sliced - divided

Step-By-Step

1Preheat oven to 350 degree F.

Spray an 8 inch casserole dish with nonstick cooking spray. Set aside.

Bake sour dough cubes until toasty.

In a medium sized bowl, whisk together eggs, salt, pepper and mustard.

2Add the toasted sour dough cubes, 1/2 the peppers, 3/4 cup cheese, ham and 1/2 scallions. Mix well.

3Pour into prepared baking dish. Top with remaining scallions, roasted red peppers and cheese.

4Bake for roughly 25 minutes or until set.

5Turn oven to broil and bake an additional few minuted or until golden.

6Remove from oven and slice into desired servings. Top with sour cream and scallions.
