Ingredients For makeover sunday brunch casserole

6 slicebacon

1 smonion, chopped

1 smgreen pepper, chopped

1 tspcanola oil

2- 8 oz boxegg substitute

4eggs
-
1/2 cfat free milk
-
4 cfrozen hash brown potatoes, thawed

1 c(4 oz) shredded reduced fat cheddar cheese

3/4 tspsalt
-
1/2 pkgpepper
-
1/4 tspdill weed
How To Make makeover sunday brunch casserole

1In a large skillet, cook bacon over medium heat until crisp. Remove to paper towel and drain. Crumble bacon and set aside. In the same skillet, saute onion and green pepper in oil until tender; remove with slotted spoon.

2In a large bowl, whisk the egg substitute, eggs and milk. Stir in the hash browns, cheese, salt and pepper, dill, onion mixture and reserved bacon.

3Transfer to a 9x13 inch pan coated with cooking spray. Bake, covered at 350 for 30-35 minutes or until a knife inserted in the center comes out clean.
