My daughter Noel makes the best veggie and fruit breads... This one is a family favorite!

Sometimes she puts optional ingredients in... sometimes she makes a simple zucchini bread... She likes to make it different ways depending if she wants to make it a meal side or a dessert.

I was lucky to be at her home while she was making a few different types...

Ingredients

DRY INGREDIENTS

4 1/2 c
all purpose flour
1 tsp
salt
2 tsp
baking powder
1/2 tsp
baking soda
2 Tbsp
cinnamon
1/2 tsp
each: ground nutmeg, ground cloves, ground ginger
3 c
sugar
1 c
brown sugar

WET INGREDIENTS

5 large
eggs, beaten
2 Tbsp
lemon juice, fresh
1 Tbsp
vanilla extract
1 c
applesauce, unsweetened
1/2 c
oil

ZUCCHINI

4 c
zucchini, shredded
2 Tbsp
lemon zest, grated

ADDITIONAL OPTIONAL INGREDIENTS

1 c
pecans, chopped (or walnuts)
1 c
chocolate chips, mini
1 c
rainins

Step-By-Step

1Grease and flour two large loaf pans or 2 large muffin tins.

I have large loaf pans (10 x 6)

2Pre heat oven to 350 degrees.

3Put all dry ingredients into a bowl and stir together.

Form a "well" , set aside until needed.

4Beat the eggs, add remaining wet ingredients. Mix together well.

Pour liquid mixture into the "well" of the dry ingredients.

5Mix together to form batter.

6OPTIONAL ingredients can be stirred in at this time.

Chocolate, raisins, yogurt or white chocolate raisins, craisins, chocolate chips or chunks.

7Add shredded carrot ( optional) and shredded zucchini, and stir until evenly distributed.

8Distribute batter into pans or muffin tins.

9Bake zucchini bread for 45 to 55 minutes (until a toothpick comes out clean).

10Bake zucchini muffins for 25 to 35 minutes (or until a toothpick comes out clean).

11Completely cool in pans before removing, wrapping, bagging, freezing or storing.
