With Zucchini coming in now, this is my moms recipe for her bread

Ingredients

3 cups flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1/2 tsp. cinnamon
1 cup brown sugar
1 cup white sugar
1 cup vegetable oil
2 cups grated zucchini
1 tsp. vanilla extract
3 eggs
1 cup chopped nuts (optional )

Step-By-Step

1Whisk your dry ingr. together, and set aside.

2Beat your 3 eggs together until frothy.

3Stir in your sugars, oil, grated zucchini, and your vanilla extract.

4Combine your dry ingr., stir into zucchini mixture until well mixed.Add in your walnuts or pecans (optional )

5Heat oven to 325 degr.

6Pour into 2 well greased loaf pans
