Preheat oven to 325 degrees. Then grease and flour 2 loaf pans.
Mix well - flour, salt, baking powder, baking soda & cinnamon in a bowl. In a seperate bowl beat the eggs slightly and add oil, vanilla, & sugar. Add the dry ingredients to the creamed mixture and beat well. Stir in zucchini & nuts until well combined. Pour batter into prepared pans.
Bake 40 - 60 minutes or til toothpick comes out clean. Cool 20 minutes & remove from pan. Cool completely.
