Ingredients

eggs
1 cup
corn oil
2 cups
sugar
3 cups
zucchini
2 tsp
double strength vanilla extract
3cups
flour
2 tsp
baking powder
1tsp
salt
1 tsp
cinnamon
1/2 cup
nuts

Step-By-Step

1Preheat oven to 325 degrees.Grease and flour two 8.5 x 4.5 loaf pans.

2In a larg mixing bowl beat the eggs well. Add the oil, sugar, grated zucchini and Vanilla. Cream together.

3In a separate bowl,sift the flour,baking powder, salt and cinnamon.Add to the creamed mixture and beat until well blended.

4Fold in the nuts.Bake at 325 for one hour or until a toothpick comes out clean.
