sugar
1/2 c
light brown sugar, firmly packed
1 large
egg
2
egg whites
1 tsp
vanilla
1 1/2 c
very ripe, mashed bananas(better with 2 cups)
1 3/4 c
flour
1 tsp
baking soda
1/2 tsp
salt
1/4 tsp
baking powder
1/2 c
heavy cream
1/3 c
walnuts(opt)

Directions Step-By-Step

1
Preheat oven to 350 degrees. Spray 9x5x3 loaf pan or line length & width with parchment for easy removal.
2
Beat butter till fluffy, add sugars and beat well.
3
Add eggs & vanilla, beat well. Add banana and beat on high 30 seconds.
4
Add all dry ingredients in separate bowl & add to banana mixture alternately with cream. Add optional nuts and raisins, mix well.(My family doesn't like nuts so I dont add them or the raisins)
5
Pour into pan and bake 1 hr to 1 hr 15 min, or till toothpick comes out clean.
Note: Bake at night and cool/rest overnight.(I didnt do this because I like fresh warm bread!)
