Super Moist Spiced Banana Bread with Chocolate and
the remaining ingredients just until blended. Do not overbeat. Stir by hand if
you want to be sure. Pour batter into 3 greased foil loaf pans (3 x 5" each)
and bake in a 350 oven for 45 to 50 minutes or until a cake tester comes out
clean. Cool for 10 minutes and then remove breads from pans and continue
cooling on a rack. Place breads back into pans for storing. Makes 4 mini loaves.
Note: These bread freeze beautifully. Wrap in double thickness of plastic
wrap and then foil. Remove wrappers when defrosting. If you are planning this as
a gift from your kitchen, then glaze the top. To make glaze, stir together 1
T. cream, 1 t. banana liqueur, and enough sifted powdered sugar to make a
drizzling consistency. Makes about 1 cup.
