This is a very hearty bread I make every year, with the biggest zucchini from our garden. I clean them good, shred w/ skin on freeze the rest for my Mock Crab cakes thru the winter.

Ingredients

1 1/2 c
sugar
2 1/2 c
flour
1 tsp
baking powder
1/2 tsp
baking soda
3/4 tsp
salt
1 c
oats, regular
2 1/4 tsp
cinnamon

egg
2 c
shredded zucchini
1/4 c
butter, melted
1 tsp
vanilla extract
1 c
applesauce
1 c
pecans, in pieces
3/4 c
craisins

combine all dry, basically in order

beat wet ingredients, til incorporated

mix both together, add nuts & craisins.
we have used the new Ocean Spray Blueberry & Cherry Infused Craisins also. And with walnuts, or no nuts.
