Pumpkin Bread with Streusel Topping

I love pumpkin bread and added the streusel topping. Wow! Adds a richness to the recipe.

3 1/4 c
all purpose flour
3 c
sugar
1 1/2 tsp
salt
2 tsp
baking soda
1 tsp
cinnamon, ground
1 tsp
nutmeg
1/2 tsp
ginger (optional)
2 c
solid pack pumpkin puree
1 c
vegetable oil
2/3 c
water
4
eggs
3/4 to1 c
chopped nuts (walnuts or pecans)

TOPPING

3/4 c
chopped nuts (walnuts or pecans)
1/2 c
brown sugar (packed)
1/3 c
all purpose flour
1 tsp
cinnamon (ground)
4 Tbsp
melted butter

Directions Step-By-Step

Preheat oven to 350 degrees F. Grease and flour three loaf pans. Combine topping ingredients until mixture is crumbly; set aside

Measure flour, sugar, baking soda, salt and spices into a large bowl. Stir to blend.

Add pumpkin, water, salad oil, eggs, and nuts. Beat until well combined. Pour batter into prepared pans. Sprinkle topping evenly on loafs.

Bake approximately 1 hour. Loaves are done when toothpick inserted in the center comes out clean.
Let rest in pans for 5 minutes. Remove from pans and cool on a rack. These loafs cut better when cooled.
