Ingredients

2 1/2 c
sugar
1 - 15 oz. can(s)
pumpkin
4
eggs, beaten
1 c
canola oil **
2/3 c
water
2 tsp
vanilla
3 1/2 c
flour
1/2 tsp
baking powder
2 tsp
baking soda
1 tsp
salt (optional)
2 tsp
cinnamon
1/2 tsp
nutmeg
1/2 tsp
cloves
1/4 tsp
ginger
**
can use 1/2 cup applesauce and 1/2 cup canola oil to reduce the fat content

Step-By-Step

1In a large mixing bowl, stir together the sugar, pumpkin, eggs, oil, water and vanilla.

2Sift the remaining dry ingredients into the pumpkin mixture. Stir until just blended.

3Grease and flour three 8x4 inch loaf pans. Pour batter into prepared pans and bake at 350° for 50 to 60 minutes or until toothpick inserted in center comes out clean.

4Cool on rack for 10 minutes before removing from pans.
