This bread is very moist and flavorful. The recipe makes 3 loaves so we usually eat one, give one away, and freeze one.

Ingredients

3 c
all purpose flour
1 Tbsp
pumpkin pie spice
2 tsp
baking soda
1 - 1/2 tsp
salt (if desired)

large eggs, slightly beaten
2 3/4 c
sugar
1 c
canola oil
2 c
canned pumpkin
2/3 c
water

Step-By-Step

1Combine first 4 ingredients in a large bowl. In another bowl, combine eggs, sugar, oil, & pumpkin; blend well and mix in water.
2Add dry ingredients and mix until well blended (do not overmix).
3Grease and flour 3 loaf pans. Divide batter evenly into the 3 pans.
4Bake at 350 degrees for 1 hour or until bread tests done.
