Pumpkin-Banana Bread w/Pumpkin Almond Glaze
|3 1/3 c||all purpose flour|
|2 tsp||baking powder|
|1 1/2 tsp||salt|
|1||pumpkin (15oz can)|
|1/2 c||mashed banana|
|3/4 c||almonds, chopped|
Fall being so near, Me and my neighbor have been enjoying pumpkin coffee after our dinner. So decided to make this pumpkin banana bread. Was this delicious! Normally I would of added pecans, but all I had were almonds. So I came up with the almond glaze to drizzle over.
In large bowl with electric mixter, beat sugar and oil on medium til well mixed. Add eggs one at a time, beating well after each. Set aside.
Beat in pumpkin and banana. Stir in almonds
Pour mix into prepared loaf pans.
Bake 50-60min. checking in center with toothpicks.
Pop out of dishes. Ready for glaze.
1 1/2 cups Powder sugar
1/2 teaspoon pumpkin pie spice
1/8 teaspoon almond extract
1-2 tablespoons milk
Mix for desired consistency. Drizzle glaze over breads.
