This is a recipe from my grandfather. He died before I was born, so I never got to ask him why they were called Phoebe's donuts. Phoebe, by the way was NOT my grandmother's name.

Ingredients For phoebe's donuts

  • 2 lg
    potatoes, mashed well
  • 1 c
    sugar
  • 1
    egg, beaten
  • 8 Tbsp
    milk
  • 1 1/2 tsp
    melted butter
  • 4 tsp
    baking powder
  • 2 1/2 c
    flour
  • 1 tsp
    vanilla extract

How To Make phoebe's donuts

    Sift flour and baking powder together in bowl.

    Mix together the remaing ingredients in another bowl. To this mixture add the flour mixture. It should be a stiff batter and you should be able to make a roll with it. If not, add additional flour.

    Once you have shaped your roll, cut it into 24 slices and deep fry them in fat. Back in the day when my grandfather made these, I am sure they probably used lard. I think shortening or vegetable oil will work fine.

    Place them on a towel to dry. While still hot, sprinkle with sugar if desired.
