Ingredients For paradise lemon bread

  • 1 1/2 c
    all-purpose flour
  • 1/4 tsp
    all-purpose flour
  • 1/2 tsp
    salt or to taste
  • 1 tsp
    baking powder
  • 1/2 c
    butter
  • 1 c
    granulated sugar
  • 2
    eggs
  • 1/2 c
    milk (almond milk is nice)
  • juice of 1 small lemon
  • 2 Tbsp
    grated lemon rind
  • 1/4 c
    chopped nuts, more if you like (hazelnuts or walnuts)
  • 2 Tbsp
    granulated sugar
  • 2 Tbsp
    lemon juice

How To Make paradise lemon bread

    Preheat oven to 350˚ F. Grease thoroughly and 8 1/2 x 4 1/2-inch loaf pan.

    Mix the flour, salt and baking powder.

    Cream the butter and sugar then add the eggs one at a time mixing them in and then beat until light and fluffy.

    Add dry ingredients to creamed mixture alternately with the milk and lemon juice. Combine lightly after each addition.

    Fold in the lemon rind and chopped nuts.

    Turn into prepared loaf pan. Bake in 350˚ oven for 55 to 60 minutes, or until cake springs back when lightly touched. Cool 5 minutes.

    Now, Combine and pour over top: 2 tablespoons granulated sugar 2 tablespoons lemon juice And allow to cool in pan

    Remove from pan when cool. This may be served plain as cake or buttered as a sweet bread.
