Ingredients

1 1/4 c
sugar
1/2 c
butter, melted
2 c
flour
1/2 tsp
baking powder
2
eggs
3 or 4 medium
ripe or overripe bananas, mashed
3/4 tsp
baking soda
1/2 tsp
salt

Step-By-Step

1Preheat oven to 350 degrees. Spray 9" x 5" loaf pan with nonstick cooking spray.

2Peel bananas and place in bowl of stand mixer or food processor. Melt butter and add to bowl. Mix until no lumps remain.

3In separate bowl, mix all dry ingredients. Incorporate this mixture into wet ingredients and blend completely.

4Transfer to prepared loaf pan and bake for 55-60 minutes, until toothpick inserted into center comes out clean.

Optional: sprinkle top of batter with 1-2 tablespoons of sugar before baking. This provides a sweet, crunchy top to your banana bread.
