Ingredients

3/4 c milk
1 Tbsp 1 tablespoon minced fresh thyme or 1 teaspoon dried thyme
1/2 c butter, softened
1 c sugar
2 eggs
2 c all-purpose flour
1 1/2 tsp baking powder
1/4 tsp salt
1 - 1 1/2 Tbsp lemon juice
1 Tbsp grated lemon peel
GLAZE
1/2 c confectioners' sugar
1 Tbsp lemon juice

I have not tried this yet, but the online comments to this recipe are great. This recipe came from my Taste of Home Feb/March 2006 issue.

I am going to make this tomorrow or maybe even yet tonight. I like the fact that it takes no special ingredients...and the reviews say there is just enough taste of the Thyme to make it delicious. It is a very moist bread.

The main picture is the Internet picture..I am also adding the one from my book, it's sliced and can see how moist it looks..

Directions

In a microwave-safe bowl, combine milk and thyme. Microwave, uncovered, on high for 1-2 minutes or until bubbly; cover and let stand for 5 minutes. Cool to room temperature.

In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Combine the flour, baking powder and salt; add to creamed mixture alternately with reserved milk mixture. Stir in lemon juice and peel.

Pour into a greased 9-in. x 5-in. loaf pan. Bake at 350° for 40-45 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack.

In a small bowl, combine glaze ingredients until smooth; drizzle over bread.

Cassie, I have had this bread before. My friend made it for me as a Christmas gift 2 years ago and I LOVED it!!! I am so excited to find this recipe because I myself have wanted to make it too. It is so delicious and the flavor of the lemon and thyme is amazing!! Oh, I just looked at your recipe and the thyme is missing....maybe you corrected already. Anyway, looking forward to making this soon. Thanks for sharing.

Sorry Kim...it's 1 tablespoon minced fresh thyme or 1 teaspoon dried thyme. I am gonna edit it..so glad I could help you with the recipe..I think I am gonna make it tonight...glad you confirmed it was good..thanks for sharing also...Cass

Cassie, I just can't go on a "diet" with this type of recipes around!!! I am going to have to make this tomorrow if I can't talk myself out of it!!! I might have to use onange zest and lime juice, but I bet it will still be great, especially since I like lime better than lemon!!! Thanks!!

Thanks for the comments ladies..I have yet to make this. When I do which might be today after getting my car inspected...lol..I am hoping it's as good as it sounds..will be posting my own pictures..have a great day!

I started growing lemon thyme two years ago I love it. but this is a easy way to get the taste without growing it
