Lemon Thyme Tea Bread

I have not tried this yet, but the online comments to this recipe are great. This recipe came from my Taste of Home Feb/March 2006 issue.

I am going to make this tomorrow or maybe even yet tonight. I like the fact that it takes no special ingredients...and the reviews say there is just enough taste of the Thyme to make it delicious. It is a very moist bread.

The main picture is the Internet picture..I am also adding the one from my book, it's sliced and can see how moist it looks..

3/4 c
1 Tbsp
1 tablespoon minced fresh thyme or 1 teaspoon dried thyme
1/2 c
butter, softened
1 c
2 c
all-purpose flour
1 1/2 tsp
baking powder
1/4 tsp
1 - 1 1/2 Tbsp
lemon juice
1 Tbsp
grated lemon peel


1/2 c
confectioners' sugar
1 Tbsp
lemon juice


1In a microwave-safe bowl, combine milk and thyme. Microwave, uncovered, on high for 1-2 minutes or until bubbly; cover and let stand for 5 minutes. Cool to room temperature.
2In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Combine the flour, baking powder and salt; add to creamed mixture alternately with reserved milk mixture. Stir in lemon juice and peel.
3Pour into a greased 9-in. x 5-in. loaf pan. Bake at 350° for 40-45 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack.
4In a small bowl, combine glaze ingredients until smooth; drizzle over bread.
