1 clightly packed sweetened coconut

3 cflour

1 csugar

1 tspbaking powder

3/4 tspsalt

1 1/2 cmilk

3/4 tsplemon extract

1/2 tspvanilla extract

1/4 tspalmond extract

zest of 1 lemon
- BUTTER

1/2 stickbutter, softened

1 Tbsphoney

1/2 tsplemon juice

1/2 tsplime juice

zest of ½ lemon and ½ lime
How To Make lemon coconut quick bread

1Spread coconut on a baking sheet and toast at 350 degrees until golden brown (7-10 min.) In a medium bowl, mix together flour, sugar, baking powder and salt. Set aside. Whisk together milk, egg, extracts and lemon zest in a bowl until blended.

2Stir in the coconut and flour mixture, stiring just until moistened. Spoon batter into a greased 5x9 inch loaf pan. Bake at 350 degrees for 55-60 minutes or until wooden toothpick inserted in center comes out clean. Cool 10 minutes in pan, then invert onto wire rack to cool completely.

3For butter: Combine all ingredients in small bowl and mix until smooth.
