This is Grandma Hazel's recipe for carrot bread. I got a blue ribbon for it when I entered it in the county fair when I was in 4H about 40 years ago. It is still a family favorite.

Ingredients For grandma hazel's carrot bread

  • 3
    eggs, beaten
  • 1 1/2 c
    oil (or use 3/4 cup each oil and applesauce)
  • 2 c
    sugar
  • 2 c
    grated carrots
  • 8 oz
    crushed pineapple in juice, undrained
  • 3 tsp
    vanilla extract
  • 3 c
    flour
  • 1 tsp
    baking soda
  • 1 tsp
    salt
  • 2 tsp
    cinnamon
  • 1 c
    chopped walnuts

How To Make grandma hazel's carrot bread

    Mix all ingredients together until moistened.

    Pour batter into 2 greased and floured 9 x 5-inch loaf pans. Bake at 325 degrees for one hour, turn off oven and leave in oven with door closed for an additional 10 minutes.

    Remove from pans and cool on wire racks. Makes 2 loaves.

    NOTES: You can also fill 9 baby loaf pans and bake for 40 minutes. Makes great Christmas gifts.
