Gluten-Free Banana Bread

After trial and error -- the bread is not dry at all with the 6 bananas. Dryness is an issue when using rice flour in recipes.

Ingredients

ripe bananas, mashed
1/2 c
chopped nuts (or more, to taste)
1/2 c
sugar (or splenda)
1 1/2 tsp
baking powder
2 tsp
vanilla
1 tsp
baking soda
4
eggs
1/2 tsp
salt
2 1/2 c
brown rice flour
1/2 c
oil

Directions Step-By-Step

Grease pans and preheat oven 350.

In a medium bowl combine mashed bananas, sugar, oil, vanilla and eggs; mix for 1 minute.

In a seperate bowl combine flour, nuts and all dry ingredients. Stir into banana mixture mixing well.

Bake for 30-35 minutes; start checking for doneness with a toothpick. Loaf pans take a little longer.
Makes 4 loaf pans. (I've even broken it into 2 loaf pans and a 9x9 dish -- the dish was not as thick and I pulled it out sooner than the loaf pans.)
