My mom was a Home Economist and raised us 4 children after my parents were divorced. She had a hand-written cookbook that had this recipe in it. I made it for the Jefferson County Fair on August 28, 2010 and it won First Place.

Ingredients

FIRST PLACE BANANA BREAD

1 3/4 c
flour
1 tsp
baking soda
1 1/2 tsp
baking powder
1 tsp
cream of tartar
1/2 tsp
salt
1/3 c
shortening
2/3 c
sugar
2
eggs
1 c
banana pulp (3-4 ripe bananas)

Directions Step-By-Step

Preheat oven to 350 degrees.

Mash ripe bananas with a fork. Cream together shortening and sugar. Add eggs, mixing well. In another bowl sift together flour, baking soda, baking powder, cream of tartar, and salt. Add flour mixture alternately with banana mixture; mixing well after each addition. Turn into greased loaf pan and bake for 45 minutes to 1 hour, or until the top is brown and a toothpick inserted comes out clean. Let cool in pan for 5 minutes then turn out onto cooling rack.
