Extremely Moist Fat-Free Banana Bread

I have never had banana bread this moist before! I tweaked a recipe I found in my church cookbook to make it fat-free, extra flavorful, and extremely moist. I've also made this one into muffins so it is already separated into portions. I hope you enjoy it as much as my son and I do!

Makes 1 loaf or 18 muffins

1 c
granulated sugar
1/2 c
egg substitute (equivilent of 2 eggs)
3 large
ripe bananas
2 Tbsp
skim milk
1 tsp
baking soda-disolved in the hot water
1/2 c
hot water
1 2/3 c
all purpose flour
1 tsp

Directions Step-By-Step

Preheat oven to 350 degrees F
Spray a loaf pan with pan spray.
Place all ingredients in a mixing bowl, making sure to smash bananas very well.
Pour into the prepared loaf pan and place in the preheated oven. Bake for 1 hour (may need a little more time) or until a toothpick comes out clean. Let cool about 15 minutes in the pan then remove from pan and cool completely on a cooling rack.
