Easy Mango Craisin Bread

Easy and delicious! Not overly sweet and very moist. You can add less Mango and it still comes out great.(one Mango is fine,2 makes it even more moist. It is forgiving that way) If your Mangoes are overly ripe, no problem! Add them in for a very moist bread. It makes its own crusty top when baked.

DRY INGREDIENTS

2 c
flour
2 tsp
ground cinnamon
2 tsp
baking soda
1/2 tsp
salt
1 1/4 c
white sugar

WET INGREDIENTS

eggs
3/4 c
vegetable oil
2 1/2 c
peeled,chopped mango
1 tsp
lemon juice
1/4 c
craisins

Directions Step-By-Step

Combine all dry ingredients.

In a separate bowl, beat the eggs with oil. Add to the flour mixture. Add Mangoes, lemon and craisins.

Our into 2 greased 8x4 inch loaf pans.
Bake at 350 degrees for about 60 minutes or until toothpick comes out clean.
