in a bowl put 5 peeled ripe bananas, cover them with plastic wrap, make a few little holes with a knife and put them in the microwave for 5 minutes, separate the juice from the bananas with a strainer and reduce the liquid on your stove top until it reaches 1/4 of a cup.
while you wait prepare your 9 inch loaf pan with butter or nonstick spray.
In a separate container mix the flour, baking soda and salt. Set aside for later
Mash the bananas until there is not big pieces, mix the banana syrup in(it should not be more than 1/4 of a cup, otherwise you bread will become flat) the eggs and the vanilla extract, at last add the brown sugar making sure is completely mixed in.
Mix wet ingredients with the dry without mixing too much to avoid developing gluten, pour into your baking pan and sprinkle white granulated sugar on top and that is it, bake for an hour and enjoy with your coffee or tea as you prefer.
