Chocolate Zucchini Bread

This is how I used the first zucchini from the garden!

Ingredients

2 c
sugar
1 c
canola oil
2
eggs, beaten
1 tsp
vanilla
2 3/4 c
flour
2 Tbsp
cocoa powder
2 Tbsp
special dark cocoa powder
1/4 tsp
baking powder
1 tsp
baking soda
1 tsp
salt
3 c
grated zucchini, peeled
1 c
mini chocolate chips
1 c
chopped nuts, optional
1 c
coconut (optional)

Step-By-Step

1Blend sugar, oil, eggs and vanilla. Stir in zucchini.
2Combine flour, cocoas, baking powder, baking soda, and salt. Add to egg mixture, blending well.
3Stir in chocolate chips and nuts and coconut, if you are using them.
4Pour batter into 2 greased and floured 9x5 loaf pans.
5Bake at 325° for 1 hour or until toothpick comes out clean.
6Cool in pan for 10 minutes and then remove to a wire rack to cool entirely.
