Preheat oven to 350. Line bottom of loaf pan with baking parchment. Sift flour, baking soda, salt and cinnamon together. Beat sugar and eggs in mixing bowl of mixer fitted with a whisk attachment for 10 minutes or until light and fluffy. Drizzle in the oil, beating constantly until blended. Add the bananas, crème fraiche and vanilla and mix well. Fold in the dry ingredients, walnuts, and chocolate chunks. Pour batter into prepared pan. Bake for 45 to 60 minutes or until edges pull from the sides of the pan. Cool in pan for 10 minutes. Remove to wire rack to cool completely. Serves 6 to 10.
