Ingredients

2 c all purpose flour
1/2 c sugar
1 Tbsp baking powder
1/4 tsp salt
1 banana, mashed
3/4 c almond or reg milk
1/2 c cooking oil or applesauce
1 c chocolate chips
1 c nuts, chopped

Lisa's Notes:

This is a super NO EGG recipe for a loaf bread. The banana serves as the binder in this. I have also used applesauce instead of oil and it works great! I have substituted in 1/2 cup of coconut, butterscotch chips and different nuts to make it different flavors and it always turns out great!

Preheat overn to 350 degrees.

Mix all dry ingredients together in a medium bowl. Mix all wet ingredients together in a separate bowl. Add dry ingredients to wet ingredients stirring only to blend- do not over mix.

Add nuts and chips. Stir just to mix.

Put in greased loaf pan that has parchment paper on the bottom of the pan(this makes releasing the bread so much easier) Bake until toothpick comes out clean and loaf is dark golden brown, about an hour.

Turn out onto a wire rack to cool for about an hour. Store in ziplock plastic bag.

This was very good! Easy to make and tastes delicious! The time for it to cook was missing, I did 55 minutes and seemed to be good!

Hi Jennifer- thanks for the note. At the top of the recipe it says an hour for cook time, but I also updated the recipe directions to show an hour as well, just to be clearer. I'm glad you like the bread- it's so easy to make and always turns out great! Enjoy your weekend!
