Ingredients

  • 1 cup raisins
  • 1 cup water
  • 3 3/4 cups all-purpose flour
  • 1 cup sharp cheddar cheese, shredded
  • 2 tablespoons sharp cheedar cheese, shredded
  • 2/3 cup sugar
  • 1 tablespoon caraway seeds
  • 2 1/4 teaspoons baking soda
  • 3/4 teaspoon salt
  • 1 1/4 cups buttermilk
  • 1 x large egg
  • 6 tablespoons butter, melted
  • additional butter

How To Make cheesy irish soda bread scones

  • Step 1
    In microwave safe bowl, microwave raisins with water on HIGH until hot, 1 - 2 minutes. Let stand 30 minutes, drain.
  • Step 2
    Preheat oven to 325 degrees F. Coat baking sheet with cooking spray. Mix flour, 1 C cheese, sugar, caraway seeds, soda & salt. Beat buttermilk, egg & 4 Tbsp butter; stir into flour mixture with raisins until blended.
  • Step 3
    On lightly floured surface, knead until dough forms. Divide dough into 2 equal pieces. Shape each piece into 6" disk. Cut each disk into 6 wedges. With spatula, transfer wedges to baking sheet 2" apart. Brush tops with remaining butter. Bake until golden, 20 minutes, sprinkling tops with remaining cheese during last 5 minutes of baking time. If desired, serve with butter.
