Ingredients

1 c carrots, grated
1 c brown sugar, firmly packed
1 1/2 c flour
2 eggs
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/2 c oil
1 Tbsp cinnamon
1/4 tsp ginger

Stormy's Notes:

This is an old recipe I first got from a school cook book copy right was 1968 The Manley School cookbook, Drayton Plains, MI.

I got the book in 1978 used and this was one of my favorite recipes from it.

It maybe a bread but it would easily pass for dessert, just throw a drizzle on it. It is so moist and the smell baking brought my hubby running for the kitchen. My kids use to beg for this bread every weekend. I had two kids and my ex had three kids that came on the weekend, they all loved it.

 

Directions

preheat oven to 350 degrees

Mix egg, sugar and oil together add the rest and bake at 350 degrees for 40-45 minutes in a sprayed bread loaf pan. I used a large one. Next time I will use a regular sized pan

I made a copy of this immediately, have some grated carrots in refrig from just making a birthday carrot cake... can't wait to try it!!!!... thanks so much.... love the older recipes....

Pinched Stormy!! This sounds really good. I have been eating lots of carrots lately and Kale. I just added both to a meatloaf I made. I couldn't really taste either, but I knew I was getting the good benefits from them.

I can almost here his footsteps. Carrot bread is one of my all time favorites. I have never had it with ginger and brown sugar. I am pinching and thinking how good it will be with a hot cup of coffee. Thanks for sharing your recipe. Happy baking!

Stormy, you always have the BEST recipes :) I will have to make this one, too. I LOVE old cook book recipes, so much better than the new ones today and made with common ingredients we have on hand. Here is a suggestion to serve with the bread, mix some orange marmalade or apricot jam with some spreadable cream cheese, warm in the microwave for about 15 seconds. MMMM :)
