Ingredients

1 3/4 c all purpose flour
1 3/4 c whole wheat flour
1 3/4 c sugar
1 tsp salt
2 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1/8 tsp nutmeg
2 c bananas, mashed
4 eggs
3/4 c butter, melted
2/3 c buttermilk
1 tsp vanilla extract
1 c pecans, toasted and chopped (optional)

Heather's Notes:

This is the best banana bread I've ever eaten and it's the buttermilk that is the secret. When my kids see that our bananas are past their prime, they ask me to make a loaf of this fantastic bread!

 

Directions

Preheat oven to 325°F. Prepare two 9x5-inch loaf pans.

Combine dry ingredients (first 8 ingredients) in a large bowl.

Combine wet ingredients (next 5 ingredients) in a medium bowl.

Pour wet ingredients into dry ingredients and combine just until flour is moistened. Add nuts if using and combine (do not overmix).

Does it need to be part whole wheat flour or can I use just all purpose doubled?

You absolutely can double the all purpose flour. I do that myself about half the time.

This IS the BEST Banana Bread ever!! My family loved it. I have Celiac disease so I have a gluten intolerance and cannot use wheat, barley, or rye in my cooking. I used 1/2 Jules gluten free flour blend and a 1/2 Bob's Red Mill gluten free flour blend. I also added about 3 T. ground flax seed to give it more fiber. It turned out beautifully and moist and the two loaves were gone in no time at all. My husband was complaining about only getting 2 slices!! I know I will be making more banana bread this week. Thanks for sharing your recipe. :)
