Ripe bananas, again. And we're so tired of banana bread!
So I thought of turning this fruit into waffles, and we had a great brunch.
Hope you will try this the next time you have some overripe bananas.

Method:
Griddle

Ingredients

3
very ripe bananas, mashed with...
1 Tbsp
lemon juice or orange juice
1 small
can (5 oz) evaporated milk
4 large
eggs
2 tsp
vanilla
2 1/4 c
bisquick baking mix
2/3 c
chopped pecans

Step-By-Step

1Preheat and grease waffle iron. Or, you can make these just like regular pancakes.
2Mix bananas, lemon or orange juice, milk, eggs, and vanilla in a large mixing bowl. Stir in Bisquick until blended - a few lumps are OK. Fold in pecans. Allow batter to set 5 minutes before baking.
3Bake waffles according to manufacturer's instructions. I used about 1/3-to-1/2 cup batter per waffle. Keep warm on plate until all waffles are done.
4Serve with butter and maple syrup. Or, butter-pecan flavored syrup is also good.
