I didn't realize how many of my Mom's recipes I had until I started putting them in my cookbook. This was another holiday favorite.

Ingredients

1/4 c
crisco shortening (melted)
1/2 c
sugar (plus a lttle tad)
1 large
well beaten egg
2 Tbsp
water
1-1/2 c
mashed bananas
1-1/2 c
sifted flour
2 tsp
baking powder
1/2 tsp
salt
1/2 tsp
baking soda
1 tsp
vanilla
1/2 c
chopped nuts (pecans)

Step-By-Step

1In a large bowl cream melted shortening & sugar; add egg and mix well. In another bowl combine water and bananas. In another bowl combine all dry ingredients.

2Alternating with dry mixture and banana mixture add into the cream mixture. Mix thoroughly after each addition.

3Add vanilla and nuts; pour into flour & greased loaf pans.

Bake at 350 degrees for 1 hour; or less watch to make sure you don't over bake.
