Banana Cranberry Bread With Candied Ginger

For the chopped candied ginger (crystallized ginger), I use ginger "chips" which are pre-chopped and come in a bag. You can find them in upscale grocers or natural food stores.

Ingredients

ripe bananas
1 large
egg
1 tsp
vanilla extract
1/3 c
vegetable oil
1/4 c
milk
1/4 c
yogurt, low-fat, plain
3/4 c
granulated sugar
1 1/2 c
all purpose flour
1 tsp
ground cinnamon
1/2 tsp
ground nutmeg
1/2 tsp
baking soda
1/4 tsp
baking powder
1/4 tsp
salt
1/2 c
fresh cranberries, coarsely chopped
1/4 c
candied ginger, chopped

Step-By-Step

1Preheat oven to 350F. Coat a 9 x 5 inch loaf pan with nonstick cooking spray.
2Peel and mash banana in a medium mixing bowl.
3Add egg, vanilla, oil, milk, yogurt and sugar and mix until combined.
4In a large bowl, sift flour, spices, soda, baking powder and salt.
5Stir wet mix into dry mix until just combined.
6Stir in cranberries and ginger.
7Pour batter into prepared pan and bake 1 hour, or until wooden pick inserted in center comes out clean.
8Cool in pan 10 minutes and turn out onto wire rack to cool completely.
