This recipe came from Better Homes and Gardens cookbook. I have been making it for 40 yrs. Very yummy. However, eventually I made some updates, to make it healthier & even more yummy. The original did not have caramel topping. Make it old style or with any updates, listed below.

Ingredients For banana coffee bread with caramel drizzle

  • 1/2 c
    shortening* - my updates below, to make healthier
  • 1 c
    sugar* - my updates below, to make healthier
  • 2 lg
    eggs* - my updates below, to make healthier
  • 3/4 c
    mashed ripe banana
  • 1 1/4 c
    sifted all-purpose flour* - my updates below, to make healthier
  • 3/4 tsp
    soda
  • 1/2 tsp
    salt
  • 1 Tbsp
    flax meal - healthy addition
  • 1 jar
    fat-free caramel ice cream topping like smucker's, save unused portion of caramel in the refrigerator

  • 1/2 c
    *real butter or vegetable oil or 1/4 cup real butter or veg. oil & 1/4 cup applesauce, preferably unsweetened
  • 3/4 c
    *sugar or 1/4 cup sugar & 1/2 cup light brown sugar packed
  • 1 lg
    *egg and 1 egg white, or eggbeaters to equal 2 eggs
  • 1 1/4 c
    *sifted, unbleached all-purpose flour

How To Make banana coffee bread with caramel drizzle

    Preheat oven to 350° and grease a 9x9x2 inch pan or 8x8 inch pan.

    Cream shortening or real butter or oil or oil & applesauce, with sugar until fluffy.

    Add eggs, one at a time, beating well after each. Stir in banana.
  • 4
    Sift together dry ingredients; add to banana mixture; mix well.
  • 5
    Pour into prepared pan and bake in preheated oven for 30 to 35 minutes. Cool in pan on metal rack. After bread is mostly cool, move to next step.

    Open jar of caramel topping & drizzle some of the topping over the top of the banana bread with a spoon. Save unused portion of caramel in the refrigerator.
