Ingredients

3 c
unbleached flour
2 c
coarsely grated fresh coconut
1 c
sugar
1 Tbsp
baking powder
1 tsp
salt
1 tsp
nutmeg
2
eggs
1 c
milk
2 Tbsp
butter, melted (or oil)
1 tsp
vanilla

Step-By-Step

1Combine flour and next 5 ingredients in a large bowl.
2In a separate bowl, beat together eggs and remaining 3 ingredients.
3Stir egg mixture into dry ingredients.
4Pour batter into a greased and floured 1-inch cast-iron skillet.
5Bake at 350F for 45-60 minutes or until a toothpick inserted in the center comes out clean.
6Cool in skillet.
