This is a recipe that I got out of a local newspaper, when we lived in a small country town. The paper was called The Gleaner.

Ingredients

1 Tbsp
butter or shortening or good spray of cooking spray for greasing of pan
2 c
all-purpose flour
3/4 c
sugar
1 Tbsp
baking powder
1/2 tsp
cinnamon (more, if desired)
1 tsp
salt
1/2 tsp
baking soda
1/2 c
pecans (optional)
1
egg
1 c
applesauce
1 Tbsp
shortening, butter, or vegetable oil

Step-By-Step

1Preheat oven to 350°F. Grease a 9x5x3 inch loaf pan.
2In mixing bowl, sift flour, sugar, baking powder, cinnamon, salt, & baking soda. Add pecans to dry mixture, if using, and mix them in.
3Combine egg, applesauce and either, shortening, butter, or vegetable oil; add flour mixture to egg mixture. Stir, just until blended.
4Put batter into prepared loaf pan. Bake in preheated oven. Test bread for doneness, with a knife, in the middle of the bread, after 45 minutes. Cook longer, if not done, up to another 15 minutes.
5Take pan out of oven. Cool in pan for 10 minutes; remove bread from pan. Cool on rack.
