quick cooking oats
firmly packed light brown sugar
raisins (i like to let the raisins soak in a little pure vanilla extract for an hour or so before adding)
1Preheat oven to 350 degrees. Grease 1 loaf pan.
2Combine flour, baking soda, baking powder, salt, cinnamon, nutmeg, oats and brown sugar.
3Add eggs, oil, and applesauce; stir until well blended.
4Stir in raisins and pecans. ** If you soaked the raisins in vanilla, drain before adding. **
5Pour into loaf pan and bake 1 hour.
