Apple Coffee Cake

I tend to use disposable 8 inch round pans when I make this cake because 1) people always want to take some home; and 2) since it freezes and reheats so well I like to make extra and don't want to freeze all my cake pans! I just wrap it up airtight in the disposable pans. 15-18 minutes in a 300 F oven and it's ready to go!

Ingredients

TOPPING:

1/4 c
all purpose flour
1/4 c
brown sugar, firmly packed
2 Tbsp
butter, softened
1/2 tsp
cinnamon, ground

BATTER:

2/3 c
butter, room temperature
1/3 c
sugar
1/2 c
sour cream
1 tsp
vanilla extract
1
egg
1 1/3 c
all purpose flour
2/3 tsp
baking soda
1/8 tsp
salt
1 c
chopped fresh apple

Step-By-Step

1Preheat oven to 350 F. Grease an 8 inch round cake pan.
2In small bowl, combine all topping ingredients until mixture forms coarse crumbs. Set aside
3In mixing bowl, cream butter and sugar until light and fluffy. Beat in egg, sour cream, and vanilla.
4In another bowl, combine flour, baking soda and salt. Mix into the creamed mixture, and blend well.
5Spoon or pour half of the batter into greased cake pan.
6Sprinkle with the apples and half of the topping mixture
7Top with remaining batter
8Sprinkle remaining topping mixture over top of unbaked cake
9Bake for 25 - 30 minutes or until a wooden pick inserted in the center comes out clean. Serve cake warm.
10For a little variation, try sprinkling about 1/3 cup raisins or dried cranberries with the apples
