Amazing Pumpkin Bread

I started making this pumpkin bread recipe in 2007. I made it for the holidays and gave to friends as gifts. One of my friends asked for the recipe. She called me after the holidays and asked me to make it for her because mine was special. It truly is a great recipe.

Ingredients

sugar
1 c
vegetable oil

solid pack pumpkin
3 1/2 c
gold medal all-purpose flour
1 tsp
baking soda
1 tsp
salt
1 1/2 tsp
cinnamon
1 tsp
ground nutmeg
1/2 tsp
baking powder
3/4 tsp
cloves
1/2 tsp
allspice
1/2 c
water

Directions Step-By-Step

A special hint I learned is to make sure that the baking soda and baking powder you use is fresh.
Combine all the dry ingredients together in a seperate bowl. That includes, sugar, flour, baking powder, baking soda, salt and all the spices.

In a large bowl, gently beat the eggs. Combine the sugar and oil with the eggs and beat well. Add pumpkin and mix well. Alternate adding the dry ingredients with the water, beating well after each addition. I use a stand up mixer.

Pour mixture into two 9-in.x5-in.x3-in loaf pans. Bake 350 for 60-65 minutes. The actual bake time depends on the type of oven you use. The bread is done when a toothpick inserted in the middle comes out clean. Cool for 10 minutes before removing from pan. Cool completely on wire racks.
