Ingredients

2 c coarsely mashed sweet potatoes (or yams)
2 bulbs of roasted garlic
1 c cannellini benas
2 garlic cloves, minced
1 1/3 c panko bread crumbs
1 1/3 c oat flour
1 lg egg, lightly beaten
1 1/2 tsp smoked paprika
1 tsp onion powder
1 tsp salt
1 1/2 tsp pepper
1 1/8 tsp cumin
2-3 Tbsp olive oil
1 avocado, sliced
1 2/3 c plain greek yogurt or sour cream
1 tsp maple syrup
4 whole wheat buns
extra salt and pepper for seasoning yogurt/cream

Linda's Notes:

One of my friend invited me to her house and she made it for me.I loved it so much. Then she told me how to make it.I would love to share with more people.

 

Directions

1. Garlic processing--- to roast garlic, I like to roast a few bulbs at once (like 4-5) to have for the week.

2. Potato processing--- pierce potatoes (I used 2 large) all over with a fork and place on a paper towel, setting in the microwave. Microwave for 5 minutes, then flip and cook for 5 minutes more. Remove, slice the potato in half and let cool until you can scoop out the flesh.

3. Burger Preparation: Preheat oven to 400 degrees. Roast sweet potatoes for 45 minutes and cool. Peel sweet potatoes and set aside (left over sweet potatoes work well in this step as well). In a large saute pan, saute onions and garlic in olive oil over medium heat. In a large bowl, add sweet potatoes, onion, garlic, and all other remaining ingredients. Make 6-8 patties. Pan sear sweet potato patties in skillet, then bake for 10 minutes at 375 degrees.

4. Assemble by topping burgers with roasted garlic cream and avocado! We also used caramelized red onion one night and it was delicious.

I really like to try differet things. Linda, I will have to make it when I go visit my son Easter weekend. He is a vegetarian and we both love sweet potatoes. I have in mind all I want to cook and bake while there -but since I am not going to be there for weeks on end, I won't get it all prepared -but hopefully we will have time to make this for lunch Friday or Saturday of that weekend. Thanks to your friend for giving you this unique recipe and thanks to you for posting it!!

Linda, I did e-mail the recipe to my son (who is vegetarian)to see if he thought it would be something that he would like (and something I could fix for lunch when I visit). He said, "It seems as if it can be a good veggie burger, but I am not sure how the maple syrup would work."

Linda, I notice that it doesn't have but a teaspoon of the syrup -does it make the potato patties sweet? Also, could you use canned pumpkin instead of the fresh, roasted sweet potatoes?

Syrup is also ok.AS for the canned pumpkin to instead potato,i have never tries this.Maybe you can have a try and cook somthing different.LoL

Hi Linda,

I have another question -this time about instructions #2 & #3, above. You cook the sweet potatoes in the Microwave (#2) AND in the oven (#3)? Sounds confusing to me -why both, or am I reading it incorrectly?

Also, my question about the syrup -does it make the patties taste sweet? That was his question to me.

Thanks so much, Linda. As I have said, it is an interesting recipe; my son is vegetarian; and we want to make them when I go visit in a few days -but wanted to make sure I understood your instructions first.

I am sorry for the late reply.
For your questions about instructions #2 & #3,I mean cook the sweet potatoes in the microwave to make sticky. In step3,I mean roast the burger with the sweet potatoes inside it. And the syrup means to make the patties taste sweet.
