When time is short & you don't want to heat up your oven. This makes just a small amount so it's good for small families or empty nesters.

Ingredients

1/2 c
Stoneground Cornmeal
1/2 tsp
Salt
1 Tbsp
Flour
1 tsp
Baking Powder
1
Egg
2 tsp
canola oil
1/4 c
Milk
1/2 c
Boiling Water
Pan Spray
Small-8-9 inch Skillet with Lid

Step-By-Step

1Mix first 4 ingredients in small bowl.
2Mix next three ingredients in small bowl.
3Warm skillet(lid on) & spray with pan spray.
4Boil Water
5Mix wet ingredients into dry. Then mix in boiling water. Stir only until well combined. Pour into skillet & cover with lid. Cook until browned & with wide spatula, flip over. Continue to cook (without lid) until firm to the touch -- total time about 5 minutes. This is on medium heat. Cut into wedges and serve warm. This is great when you are in a hurry since it mixes in a flash and cooks really fast.
