Nanny's Corn Puddin'

My mother, whom my son called Nanny, was a wonderful cook. Here is one of her recipes for a corn puddin'.

pinch tips: How to Knead Dough


1 stick
1 can(s)
creamed corn
1 can(s)
whole kernel corn
medium onion, finely chopped
1 box
jalapeno cornbread mix, dry (i use jiffy)
red pepper to taste (optional)

Directions Step-By-Step

Pre-heat oven to 325 degrees. Melt half of the butter in a 9x13 pan. Mix all other ingredients (do not drain cans of corn-use juices) and pour into pan. Melt remainder of butter and pour on top. Bake one hour.
