I got this recipe from my daughter's grandmother. I don't serve it as often as I should, but it's a great companion to a bowl of chili.

Ingredients For mexican cornbread

  • 1 c
    yellow corn meal
  • 1 c
    all purpose flour
  • 2 Tbsp
    sugar
  • 4 tsp
    baking powder
  • 1/2 tsp
    salt
  • 1 c
    milk
  • 1 lg
    egg
  • 1/4 c
    vegetable oil
  • 1 sm
    jalapeno pepper, seeded and diced
  • 1/4 c
    shredded cheddar cheese
  • 1 can
    cream style corn
  • 1 Tbsp
    bacon grease

How To Make mexican cornbread

    Preheat oven to 425 degrees.

    Combine cornmeal,flour,sugar,baking powder, and salt in a large mixing bowl.

    Add milk, egg, and oil. Beat until mostly smooth.
  • 4
    Fold in pepper,cheese, bacon grease and corn.
  • 5
    Bake in a greased cast iron skillet until a toothpick inserted in the center comes out clean (approximately 25 minutes)
