Ingredients

2 c
all purpose flour
1 tsp
sugar
1/2 tsp
baking soda
1/2 tsp
baking powder
1/2 tsp
salt
1 tsp
italian seasoning or oregano
1/2 tsp
garlic powder
1 tsp
dried minced onion
1 c
buttermilk
1/2 c
butter, melted
2
eggs, beaten
1 c
shredded zucchini
1 c
shredded mozarella cheese

Directions Step-By-Step

Combine in a large bowl the first 8 dry ingredients.

Add buttermilk, melted butter and eggs. Stir together with a spoon.

Fold in the shredded zucchini and mozzarella cheese.

Spray a 9x5 loaf pan with PAM. (I prefer to use 3 mini loaf pans.)

Bake in pre-heated 350┬░oven for 55 - 60 minutes until the center tests done (appx. 40 for the smaller pans).

Remove from oven and cool for about 10 minutes before removing from pan(s).
