Put first 6 ingredients in a food processor. Pulse 7-8 times until chunky/smooth, add cheese and pulse a couple more times.
(If it seems a bit dry for spreading, add a bit more oil)
(Any leftovers can be stored in refrigerator, or it is yummy stirred into cooked pasta)
Fry 6 slices of bacon and drain
Slice one avocado
Slice one tomato
Spread 4 slices sour dough bread or nutty whole wheat bread with butter
Spread opposite sides of bread with pesto, place sliced avocado over pesto on 2, and top with 3 pieces of bacon and tomato slices, and top with other 2 pieces of bread. Grill on both sides until golden browned...ENJOY!!
